Drying is one of the oldest method known to men as a means to preserve food. Thus, dried food such as meat, fish etc has been a a part of man´s food staple for thousands of years. What has only recently ermerged is that dried fish is much healthier than previously thought, a genuine health food.

A lot has been written and said about the beneficial effects of Omega-3, which can be found in fish oil. The beneficial effects of fish proteins and lipids have not been researched as extensively as omega-3 but that is changing. Fish proteins contain all the essential amino acids and, like milk, eggs and mammalian meat proteins, have a very high biological value.

In a recent project at Matís, scientists discovered that while a fresh haddock contains around 17-19% protein, stockfish made from haddock contains between 75-80% protein. Since the Recommended Dietary Allowance (RDA) of protein for an adult male is approx. 0,75 g per kilo (based on a 2,000 calorie diet), a male weighing 70 kg needs about 53 g of proteins per day and eating only 66 g of stockfish is sufficient to reach that goal.
