The goal is to link three crucial groups of research topics to optimize biological effects of three main categories of aquatic-derived bioactive compounds; omega-3 PUFA, peptides and polyphenols.
 
The three main goals are to:
1. Produce, characterize and assay bioactivity of three sources of aquatic-derived compounds
2. To understand the stability and stabilize these aquatic compounds in different food matrixes.
3. To understand the stability of these compounds against structural, bioactive and oxidative degradation during gastrointestinal (GI) digestion.
4. To understand effects from the GI-digests on cellular oxidative stress and inflammation.
