Shelf life of vacuum packed smoked Herring fillets

Main objective is to evaluate the shelf life of vacuum packed smoked Herring and the effect of the preservatives Bensoate and Sorbate on the shelf life.

The project is in collaboration with Egils herring ehf., a food production company. Egils Herring ehf was established in 1954 and has always been located in the town of Siglufjordur. The company has from the beginning focused on  various seafood consumer products and in the subsequent years the production has been especially focused on smoked salmon and smoked herring packed in vacuum packaging.
