Production of surimi from byproducts with pH-shift processing

The objective is to develop and commercialize a process to produce high value and quality surimi from low value and underutilized raw materials using the pH-shift process. The process will be optimized for a variety of different raw materials.  At the end the goal is to have a viable surimi production in Iceland which will lead to more jobs, increased diversity in the Icelandic seafood industry and increased foreign income.
