Improved stability and quality of fish proteins and peptides
The main objective of the project is to develop a production process to produce high quality oxidatively stable fish peptides from saithe with high bioactivity and consumer acceptance. This will be a major step forward in the commercial production of Icelandic bioactive fish peptides, which have a great market demand, and as a result of this project will exceed the quality of current commercial ingredients.
