Salted cod - additives regulations.

The aim of the project is to provide information based of analytical results on the role and presence of added phosphates in the processing of salted cod that will hopefully clear uncertainties in the intepretion of the use of polyphosphates in the processing of cod. Import authorities (custom/ health inspection) in some EU countries believe that it is illegal and the imports of salted cod processed with polyphosphates should be banned. Some producers have at the same time being using polyphosphates in the believe that is is a processing aid that has no influence and is not present in final product that is sold to consumer in South Europe and thereby legal according to the relevant EU directive on the use of food additives.
