Optimization of defreezing and brining of shrimp before pilling
The target in this project is to gain knowledge in production management in shrimp factories. The project aim is to optimize the first process stages of shrimp production, with consideration to efficiency, quality and easy pilling. The main goal is:
- to analyze and point out the most important factors affecting the system control during thawing and brining, and which these processes should be combined and then to what extent.
- to gain yields in the production, minimize the loss of dry material and maximise the quality of the product.
This project is supposed to improve the competitive position of the Icelandic shrimp factories on the market and strengthen the shrimp industry to start profitable deep-sea shrimp fishing in Icelandic territorial waters.
