Using saithe in ready to eat fish product

The aim of this project is to utilize saithe raw material for the ready-to-eat product market in Europe and Iceland.  This will be accomplished by developing a high quality processing line for product forming, encapsulation, deep frying or heating, freezing and packaging as well as developing new product lines in cooperation with buyers.  The aim of this project is to develop a new product range of ready-to-eat fishmeals from Icelandic raw material.

The project aim was the development of product lines of ready-to-eat products from saithe for marketing in Europe and Iceland. Virtually all saithe caught around Iceland is exported, to Europe and the United States, where these products are processed further into consumer products with  significant increase in its value. It is therefore important to consider ways to increase the value of saithe being exported. Various ways are available to increase the value of saithe being exported. This project focused on breading methods which are a common in the ready-to eat consumer market.  The results of experiments done in this project proved that the products developed are of acceptable quality and likely to meet the demands of consumers.
