Safe Transportation of Marine Bioactive's from Source to Active Site
The aim of the project is to follow the fate of three groups of marine bioactive compound from raw material to active cellular site; long-chain n-3 polyunsaturated fatty acids (LC n-3 PUFA), fish derived peptides and seaweed-derived polyphenols. Our focus is to investigate whether there are potential bioactivity losses, toxic effects or changes in protein expression due to oxidation of the bioactives either prior to ingestion or during gastrointestinal (GI) digestion. The interaction between the LC n-3 PUFA and two other groups of marine bioactives in this chain of events is a novel research focus. The project is a collaboration between Matis, Chalmers University of Technology, University of Ljubljana and Iceprotein.
