Novel bioactive surimi products developed from byproducts
The objective is to develop and commercialize a novel protein extraction process to produce high quality innovative bioactive surimi from low value underutilized raw materials. A major shortage is projected for high quality surimi in addition to a very strong demand for bioactive seafood products.There exists an excellent opportunity now for Iceland to enter this market. The process will be optimized and the surimi tested for its properties and quality verified by customers. New technologies and formulas will be developed to produce a novel bioactive surimi, with emphasis on products which can have a positive health effects. Surimi seafoods will then be commercially produced on a large scale followed by extensive market and consumer testing globally. At the end of the project the goal is to have a profitable surimi production in Iceland which will lead to more jobs, increased diversity of the Icelandic seafood industry and increased foreign currency income.
